Sometimes, I take the extra step of preparing a large batch of soup or chili, which guarantees a hearty and fuss-free lunch option for several days.

Dinner is where my culinary creativity shines. I relish experimenting with different cuisines, and one of our all-time favorites is taco soup. Using locally sourced beef brisket from Third Day Farm and my very own homemade bone broth crafted from meticulously selected beef bones, every spoonful delivers an explosion of flavor and nutrition. Plus, the ease of reheating after a long day is an added bonus.

Easy Beef Brisket Taco Soup

This week’s crown jewel of my meal prep is the hearty and scrumptious taco soup. As the weather begins to cool down, this soup provides the perfect warmth and comfort. What sets it apart is the unwavering commitment to quality ingredients. Sourcing the beef brisket locally from a farm renowned for its premium regeneratively sourced meats and crafting homemade bone broth from select beef bones ensures that every spoonful is a mouthwatering celebration of flavor and nutrition.

Easy Beef Brisket Taco Soup Instant Pot

Equipment

  • Pressure Cooker
  • Slice and Dice Knife
  • Cutting Board

Ingredients

1/2 a yellow onion (sliced)

3 red baby bell peppers (sliced)

2 jalapeños (sliced)

2 tbsp of butter

4 lbs of beef brisket

Dash of salt

1 can of diced tomatoes with green chilies

1/2 cup of tomatillo sauce

1/2 cup of salsa

2 tbsp of minced garlic

4 cups of your choice of rice (mine had corn and seasoning)

2 packets of taco seasoning

3 cups of gelatinous bone broth (perfect for tender meat)

Instructions

In an instant pot, sauté sliced onion in butter until golden.

    Add baby bell peppers and jalapeños while sautéing.

      Place beef brisket on top, then add bone broth and taco seasoning.

        Stir in salt, garlic, tomatillo sauce, and salsa.

          Mix in your choice of rice.

            The general rule for instant pot cooking is 20-25 mins per pound of beef brisket. I cooked mine for 60 minutes plus the 15-minute slow release of the pressure release valve. (mine took 75 mins). Meat will be falling apart!

              Remove just the brisket from the instant pot into a large bowl, shred your meat, and remove any bone if you happen to use a different cut of meat.

                Once the meat is shredded place it back in the instant pot, stir, and enjoy!

                  • For meal prep- I placed them in glass to-go containers and stored them in the fridge.
